From stellar systems equilibria to collisionless statistics

I present the methods originally employed in [1] to derive statistical properties of light distribution in galaxies, before discussing their application in other physical systems. The methods in question involve the derivation of maximal entropy distributions using phase space coarse-graining arguments which find use in collective descriptions of many-body physics.
